Grab n Go Breakfast Cups
(Makes 6 Egg Cups)
INGREDIENTS:
12 large eggs
1 package of Burrito Sized Flour Tortillas (I use Mission Brand)
1 tube of sautéed Breakfast Sausage (Can also use Bacon, Ham, Turkey, etc)
1 cup of shredded Cheddar cheese (optional, but adds great flavor)
Salt and pepper to taste
Optional additions: Carmelized onions, Roasted Red Peppers, sauteed Spinach, Hashbrowns, etc)
Feel free to adjust the quantities or ingredients to fit your preferences. For example, if you are looking to cut calories, reduce the amount of cheese/breakfast meat. Add veggies for extra fiber and nutrition
STEPS:
Preheat your oven to 325°F (175°C).
Using a large muffin pan, grease each cup to ensure no sticking!
Cut your Burrito Tortillas in Half
Cut the Halved tortillas in half again
Place two tortillas in each muffin tin, corner facing inward, and carefully shape them into cups. (Watch my tiktok video below for a tutorial on this)
Fill each muffin tin with a spoonful of sautéed Breakfast Sausage
Sprinkle a pinch of cheese onto the Sausage
Crack two eggs into each muffin tin
Use a fork to carefully stir the eggs
Sprinkle the top with salt and pepper
Bake at 325 for 30-40 minutes until the egg is puffy and not runny
Cool and store: Allow the cups to cool for a few minutes before removing them from the tin. Store in an airtight container in the refrigerator for up to a week or freeze them for longer storage.
Reheating: To enjoy them again, microwave for about 30-45 seconds, or place in the toaster oven at 325 for 15 minutes.
