Super Bowl Sunday was this past weekend, and after staying out later than usual, the last thing I wanted to do on Monday was be in the kitchen all day meal prepping. My BBQ Chicken Loaded Potatoes is the perfect weeknight dinner for those evenings when you're running on fumes and just don't feel like standing over a hot stove, or let alone standing at all! Plus, the entire family will love it!
My favorite part about this recipe is that its not only simple to throw together, it's CHEAP. I use Chicken Thighs instead of Chicken Breast, as they're always cheaper at the grocery store. Potatoes are an affordable staple, and I typically pair the meal with a side of Steamed buttered Broccoli, or Green Beans. You can easily serve a family of 4-6 for $20.
This recipe uses an Instant Pot or Crock Pot. Either will work just fine. I use my Instant Pot because it requires less planning whereas with the Crock Pot you need to get the Chicken cooking early in the day.

What You’ll Need
INGREDIENTS:
(Makes 6 Potatoes for 1 Week of Easy Meal Prep)
Russet Potatoes: 6 medium-sized potatoes, perfect for loading with fillings.
2 lbs. Boneless Skinless Chicken Thighs
Barbeque Sauce (Whichever brand your family enjoys. I personally love Sweet Baby Ray's)
1 Cup Shredded Cheddar Cheese
1/2 Cup Sour Cream
Chopped Green Onions
Salt, Pepper, Garlic Powder: Always essential seasonings to enhance the dish!
STEPS:
Preparing Your Potatoes
Bake the Potatoes: Preheat your oven to 400°F (200°C). Rinse and prick the potatoes with a fork to allow steam to escape. Bake on a sheet pan for 45-60 minutes, until fork-tender.
(I do not wrap my potatoes in foil. I just have a personal conviction that it may cause the aluminum to seep into the potato...food for thought)
Prepare the Chicken: While the potatoes bake, add your Chicken to your Instant Pot. Cover with water. Hit 'POULTY' Button for 30 minutes.
a.) Crock Pot: Add Chicken & cover with Water. Slow Cook on High for 3 hours
3.) Once Chicken is cooked, drain out the water
4.) Using a pair of Kitchen Tongs, begin to mix the Chicken until its shredded
5.) Add 1/2 cup of your favorite Barbecue Sauce
Assemble Your Loaded Potatoes
Now comes the fun part—assembling your BBQ Chicken Loaded Potatoes.
Cut the Potatoes: After baking, carefully remove the hot potatoes. With oven mitts, cut a slit in the middle of each potato and gently squeeze the ends to pop them open.
Stuff the Potatoes: Add a sliver of butter to each Potato, Salt, then add the Shredded BBQ Chicken
Add more Barbecue sauce to the top of the shredded chicken
Next, sprinkle each Potato with Cheese
Final Bake: Return the stuffed potatoes to the 400 degree oven for an additional 7-10 minutes until the cheese is GBD (Golden Brown Delicious)
Top with Sour Cream, Chopped Chives, and enjoy!
